Is it possible to grow kombucha from scratch? Kombucha care. Kombucha: contraindications

Each of us, at least once in our lives, has come across such an interesting product as kombucha. The Japanese call it seaweed, which looks like a jellyfish with a smooth top and loose bottom, where the yeast bacteria are located, which are the basis for making tea. Today we’ll tell you how to grow kombucha from scratch.

The identity of the person who first grew this unique product has not yet been established. But this became known many thousands of years ago, and has been successfully used for medicinal and prophylactic purposes to this day.

How to grow kombucha at home? There are several recipes for this, but the main and simplest one is, of course, made from tea leaves, which is logical based on the name. It is also grown from rose hips, apple cider vinegar, beer, herbs and a piece of ply, which will be discussed further.

Growing from scratch from tea

To create an optimal nutrient medium for the nucleation and growth of a fungus, certain components will be required:

  • glass containers (3 liters), previously washed clean using baking soda;
  • pure (without additives) loose leaf black tea – 5 small spoons;
  • granulated sugar – 7 tablespoons;
  • a piece of gauze or bandage.

Pour the prepared amount of tea into the teapot, steep and add sugar. Pour the tea leaves into the prepared container, then strain it and tie the top of the jar with gauze or a piece of bandage, placing it in a warm place protected from direct sunlight.

After some time - from 1 to 2 weeks, you should smell vinegar from the container. It will disappear in about 7 days, which will indicate the successful formation of the final product.

After a month and a half, you will see a pancake at the top with a mucous base. This is young kombucha, which must be carefully transferred to another similar container filled with tea leaves (not strong).

Growing with apple cider vinegar

Medusomycetes (another name for the product) is grown independently on apple cider vinegar as follows:

  1. Clean and dry apples (sour) are grated completely, including the middle, using a coarse grater. It should be about 400 grams.
  2. The apple mass is placed in a pre-washed three-liter jar and filled with boiled chilled water.
  3. Honey (150 g) and yeast (15 gram pack) are added to the composition.
  4. The container (open) is placed in a dark place with the contents stirred daily.

After 10 days, the mixture is wrung out (several layers of gauze), and the liquid is poured into another similar container, covered with a clean natural cloth (thin) and left alone for 2 months.

The completion of preparation is marked by the lightening of the composition in the jar and the appearance of a jellyfish at the top, which has several layers. The finished mushroom should be transferred to a clean bowl with sweet tea poured in and then proceed as in the previous method.

How to properly grow from scratch from a piece of layer

For this method of diluting the product, you will need a small piece of ready-made mushroom.

For its growth you need to prepare a special solution:

  • Regular tea is brewed in the proportion of 1 liter of water to 2 tsp. tea leaves It doesn’t matter what composition you choose - black and green will do, most importantly without additives;
  • put sugar in the tea leaves, no more than 50 g, stir until the sweet crystals are completely dissolved;
  • Cool to room temperature and pour into a jar.

Important: the dishes must be perfectly clean, otherwise mold will appear and ruin the drink.

Place the existing piece of mushroom into the container and cover the top with gauze (fold several layers), place in a warm and slightly darkened room.

After 10 days, or maybe 7, you will be able to taste the tasty and healthy liquid. The finished composition does not need to be covered with a lid; it must breathe all the time.

Kombucha from rosehip infusion

This drink will be especially useful in the cold season, perfectly protecting the body from colds:

  1. Pour dry ground rosehip composition (4 tbsp) into the prepared thermos.
  2. Pour 0.5 liters of boiling water over it and leave it alone for 4 days.
  3. Pour the prepared rosehip infusion into a prepared glass container (3 liters), after straining.
  4. Add 5 tablespoons of granulated sugar to the drink, tie the neck with gauze, and place in a warm and dark place.

Grow a mushroom on beer

Combine live beer (100 ml), wine vinegar (10 ml) and sugar (5 g), pour the mixture into a container, covering the neck. This composition is infused similarly to previous recipes until a kind of film appears on the surface. As soon as it reaches a thickness of 2 mm, it will immediately need to be transferred to a container where sweet tea has already been poured. After 7 days the drink will be ready for consumption.

Kombucha with herbs

The preparation of a healing herbal composition is similar to the previous one. But you choose herbs based on your existing health problem.

Proportions - for 200 g of herbal collection, take 3 liters of boiled water, leaving the composition overnight. After that, add a little honey and place the jellyfish there. In just 7 days you will receive a healing herbal infusion.

Which of the above options you will use is up to you to decide, but each of them will help you not only enjoy the unique taste, but will also fill the body with a lot of useful and necessary substances.

Proper care

Growing a mushroom is only half the battle; after that, it is also important to preserve it so that it can help all members of your family stay healthy for a long time.

Medusomycete is not just mold, but also a living organism that requires certain care:

  • the jar where the mushroom is located must be absolutely clean, otherwise it will get sick and cease to be useful;
  • It is necessary to wash the body in layers, each separately, once a month in plain water. And when delaminating, it should be moved to another similar container, filled with fresh tea. This happens when the body of the mushroom becomes thicker than 4 cm. In this case, each layer must be transferred to a separate container;
  • each time after pouring out a drink for drinking, add a solution of boiled water, loose leaf tea and sugar in the proportions of 2 l / 4 tbsp / 1 glass, respectively;
  • when emptying the dishes, transfer the mushroom to the dishes, wash the container with soda and pour in a fresh composition, placing the washed organism there;
  • Do not sprinkle sugar on the surface of the mushroom under any circumstances;
  • There is no need to fill the jar with liquid to the top, a sufficient volume is 2 liters;
  • the temperature in the room where this organism lives should be between 18-25 degrees;
  • If you plan to leave home somewhere for a long time, place the mushroom in a bowl with plain water and put it in the refrigerator.

When you need to drain brewed tea for mushrooms, decide for yourself according to taste - for those who like an sour drink, it is recommended to do this every 4 days, for less sour tea - once every 2.

Important: if the mushroom is sick, it sinks to the bottom of the container. In this case, it will need to be cured, and only after that drink kvass.

Storage rules

Many people drink kombucha only in the summer. For long-term winter storage, the body is placed in polyethylene and placed in the vegetable compartment of the refrigerator.

You can dry the body and store it in this state in a kitchen cabinet or refrigerator. To do this, you need to remove it from the jar, wash it and place it in a deep plate, covering it with gauze or a clean piece of natural fabric. Turn it over periodically until it dries completely.

To revive the mushroom, simply prepare a tea drink according to the classic recipe and place it there. After 7 days the mushroom will come to life. But the first drink after this process will need to be poured out, and the next one is already suitable for consumption.

There are certain rules that will help keep the body in good shape for many years:

  1. Periodically sterilize the container where the fungus lives.
  2. Strain the drink using a plastic strainer.
  3. The jar should be kept away from drafts and a lot of light.
  4. Washing the body in the summer - once every 7 days, in the winter - less often.
  5. When pouring a new tea composition, make sure that grains of sugar and tea leaves do not get on your body.

And be sure to carefully examine the body for mold, damage and diseased areas. This will protect you from the unwanted consequences of drinking a low-quality drink.

Where to get kombucha

If you don't want to grow kombucha yourself, you can borrow it from friends or acquaintances who already have it. It is possible that your elderly neighbors have kombucha. You don’t need to take a whole mushroom, it will be enough to take a piece and care for it properly.

Also, now there are a lot of advertisements for the sale of kombucha on the Internet, there are even special sites where you can place an order.

So getting or growing a mushroom is not a problem at all. It not only quenches thirst well in the heat, but also has medicinal properties.

There are all sorts of names for the beloved kombucha, which is located on many people’s windowsills as a permanent habitat. Most often it is called Tibetan, because it was there that the first mushroom was grown a long time ago and, as they say, completely by accident. The invigorating, healing drink made from it is liked by many, and information on how to make kombucha yourself will be very useful to everyone who wants to improve their health by drinking wonderful kombucha.

How to make your own kombucha at home

You will need patience and a very well rinsed three-liter jar, a piece of clean gauze, tea leaves, sugar. The jar should not be washed with synthetic products, because such treatment will not allow fungi to develop. It is best to use baking soda for this, but perfect cleanliness must be mandatory, because this will guarantee that bacteria will develop well and fermentation will be successful.

Preparation begins with brewing strong tea. It makes no difference what the tea leaves will be, the main thing is that it does not contain any additives. Many people prefer to use the cheapest types, but some prepare it from the highest quality large leaf. You need not so little of it - for 500 ml of boiling water, take 4-5 heaped spoons of tea raw materials.

First, a strong infusion is prepared from water and tea in a teapot, wait until it cools, and only then add 5 - 7 tablespoons of sugar, mix thoroughly and strain thoroughly. The resulting tea leaves are poured into a prepared jar and placed in a warm place for almost two months. You can’t seal the jar tightly; it’s better to just cover it with gauze.

Within a couple of weeks you will notice the smell of vinegar - this means that the process is proceeding normally. The smell is unpleasant, but you will have to wait, it will disappear in a week. During this period, it is interesting to watch the development of the fungus - every day it becomes thicker. As you can see, it is not so difficult to do, it is much more difficult to provide such care for it so that it does not die, and this happens when it sinks to the bottom of the jar.

When the mushroom has grown, you need to carefully remove it, rinse it under cool water and transfer it to a jar in which two liters of brewed tea have already been prepared (which is now prepared with a lower concentration - 2 tablespoons of leaves and 2-3 tablespoons of sugar). To fermentation it happened faster, it is advisable to add a glass of ready-made kvass there. As a result, the container will not be completely filled and there will still be room for fermentation. After 5-7 days, you can drain the invigorating drink and repeat all the steps again, because the wonderful kvass will run out very quickly. Remember

For more than a hundred years, a popular drink of eastern peoples has been known in Russia - kombucha. It is also called Japanese or medusomycete. It really does resemble a jellyfish. And the liquid in which it lives becomes a tasty carbonated drink like kvass and acquires medicinal properties. This is why many people love kombucha. How to care for and use it? Previously, this information was passed on to each other orally. But now you can independently find a lot of information about this amazing mushroom.

general characteristics

This product has long been known in the East. In China it was called the elixir of health and immortality. They believed that this drink helped digestion and toned the body. But to do this you need to know how to care for and consume kombucha. Some people may not like the photo of this substrate. After all, it resembles a jellyfish, which is why it is called a medusomycete. Its upper surface is smooth, and underneath there are many threads containing yeast bacteria. It is they, as well as acetic acid bacteria, that transform the solution into a healthy carbonated drink.

The color of the mushroom can be whitish-yellow, with a brown tint or pinkish. It gets thicker with age, and if not separated, it can eventually grow up to 100 kg. But at home, the medusomycete is a layered cake, most often living in a three-liter jar. It is used to produce a tasty tonic drink called kombucha or kombucha.

How to care for a mushroom?

Medusomycetes can be purchased online or asked from friends. People who breed it will be happy to share. The fact is that with proper care it grows quickly, and if you do not separate the lower part, it can fill the entire jar. Therefore, now there are no problems in purchasing kombucha. It’s also easy to learn how to care for, brew and use it. Moreover, there is nothing complicated about it.

Kombucha requires a nutrient medium to survive. Most often it is placed in a sweet tea solution. The mushroom itself uses sugar, and many of the tea substances remain and give the drink a specific taste and aroma. To get such kvass, you need to place the purchased young mushroom in a clean three-liter jar, best if together with a ready-made drink. To it you need to add about 2 liters of cooled, sweet, weak tea; you can brew the tea after drinking. The jar needs to be covered with gauze so that the mushroom can breathe, and placed in a warm, bright place, but away from sunlight and heating devices.

How to grow kombucha from scratch?

If you are unable to find a mushroom plate, you can breed it yourself. To do this, you only need a little ready-made tea kvass. It needs to be poured into a glass jar, covered with gauze and left to stand at room temperature. After 1-2 weeks, a film will begin to form on the surface, which will eventually transform into a new mushroom. You need to care for it in the same way as the old one, only the drink that it will produce at the initial stages will not have its properties.

This is also often required if the mushroom has died due to improper care. It happens that people get tired of this drink, but after a while they want to try it again. In this case, in order not to grow a new mushroom, you can store the old one in the refrigerator in a small amount of solution.

Before preparing this healing drink, you need to learn how to care for and consume kombucha. There are some rules, if you do not follow them, the mushroom may get sick or die.

  • The optimal temperature for the life of the fungus is 24-25 degrees. Therefore, it is not advisable to place it in a cool room, or near heating devices.
  • It is necessary to protect the jar of mushroom from exposure to direct sunlight.
  • The resulting solution must be drained every 5-6 days, and even more often in the summer. If the mushroom sits too long, there will be a lot of vinegar in the drink, and it will no longer be so tasty and healthy.
  • Every 3-4 weeks you need to rinse the mushroom with clean, cool water, inspect for damage and separate if it has become too thick.
  • You only need to fill the mushroom with the cooled solution. Room temperature is best. Too hot can destroy the body, and cold can slow down its vital activity.
  • The solution that is added to the jar with the mushroom must be well filtered. Sugar must be dissolved in it. Sugar grains and tea leaves can cause a burn on the surface of the medusomycete.

In order for the mushroom to be beneficial and produce a tasty healing drink, it is important to follow these rules. This is a living organism, and it also needs to be loved. Therefore, it is recommended to study well how to care for and consume kombucha.

Preparation of a healing drink

Many people think that making such kvass is very difficult. But it really doesn't take much time. There are many tips about kombucha: how to care for it and use it. It is recommended to prepare the drink using black tea. It is its constituent components that the mushroom uses to produce ascorbic acid and other useful substances. The most common recipe for preparing a tea solution is this: for a three-liter jar you need 2 liters of water. Brew 4-5 tablespoons of loose leaf tea in it and dissolve a glass of sugar. You should not make tea that is too strong, as this may slow down the functioning of the fungus.

But you can also pour medusomycete with a solution of green tea, and even decoctions of medicinal herbs. From this it acquires additional healing properties. Most often, nettle grass, linden flowers, rose hips, birch leaves, plantain, and blackberries are used for this. It is not recommended to use herbs containing a lot of essential oils. When processed, they can greatly change the properties of the drink, and it is unknown how this will affect human health. These are chamomile, sage, currant. The same applies to the advice to infuse mushrooms in juice or decoctions of fruits, and use honey or jam instead of sugar. It is best to add the necessary ingredients to a ready-made drink.

You need to fill the mushroom with a new solution as soon as the ready-made infusion is drained. It is recommended to leave a little in the jar, this will speed up the maturation of the drink. Ready kvass should be poured into bottles, but not to the brim, as it may still ripen and foam. It should be stored in the refrigerator for no more than 1-2 months. To house the fungus you need to use glassware. You can store the drink in any container, but not in metal.

Can the drink be harmful?

If you know how to care for kombucha and use it correctly, it will only bring benefits to the body. But still, not all people are recommended to drink this drink. Due to the presence of a large amount of organic acids, yeast, tonic substances, as well as due to its ability to lower blood pressure, it is contraindicated to use tea kvass in the following cases:

  • with gastritis with increased acidity of gastric juice;
  • with peptic ulcer;
  • diabetes mellitus;
  • gout;
  • fungal diseases;
  • hypotension;
  • children under 12 years old.

In addition, it is not recommended to drink a highly fermented drink, as well as an infusion of a mushroom that is affected by any disease. In order not to harm your health, you should not drink too much of this kvass; it still contains alcohol, albeit in small quantities. In addition, the presence of acids in the infusion can damage sensitive tooth enamel and aggravate existing oral diseases.

Kombucha diseases

This is a living organism, so it can also get sick and even die. And most often this happens because people do not know how to care for kombucha and consume it correctly. First of all, when rearranging the medusomycete, washing it and separating it, physical damage can be caused to it. Such damage does not affect the quality of the drink, but it is still better to wait until the mushroom recovers by placing it in a small amount of nutrient solution for some time.

But there are other diseases that make the drink unfit for consumption. Most often, the upper surface of the mushroom turns brown. This occurs due to violation of the rules of care and use of kombucha. Grains of sugar or tea, too hot or cold water, etc. cause damage to the surface of the medusomycete.

Sometimes blue-green algae grows in a jar with a mushroom. The solution then becomes cloudy and becomes unsuitable for consumption. Algae can form if the room temperature is too low, or if the mushroom is exposed to sunlight. If the temperature regime is violated, mold may also form on the surface of the medusomycete. In addition, in the summer, midges can get into the jar and lay eggs in the mushroom.

All these problems lead to the death of the body. Sometimes you can try to save the mushroom, for example, by separating the brown upper part. But it’s best to thoroughly study everything about kombucha: how to care for and use it. Then no problems will arise.

Kombucha: how to care for and use - reviews

For the most part, the responses from people who have kombucha in their homes are positive. People love the pleasant, refreshing taste of this drink. Many people are so accustomed to it that caring for the mushroom does not cause them any problems. It lives with people for many years, and the infusion is used not only as a drink, but also as a remedy. Many people note that kvass helped them improve digestion, strengthen the immune system, and normalize blood pressure. And recently this drink has become very popular abroad. It is sold in glass bottles and is called “kombucha”.

The first time the mushroom needs to be poured with strong tea (without tea leaves) with sugar, not hot, maybe in a lukewarm room. temperature, approximately 0.5 liters. As the mushroom grows, liquid should also be added.

If you took a wide thermos, but the jar where you put the mushroom and where it will live is narrow, then after 2 weeks you can drink it. And if the thermos is thin and the jar is large and the mushroom has not grown much in diameter and thickness in the thermos, wait until it grows in the jar, because the drink will be of no use due to the discrepancy between the proportions of the size of the mushroom and the liquid poured into it. It is important. It's just a matter of proportions.

CARE OF TEA MUSHROOM

Growing kombucha at home from scratch is only half the battle. The second equally important half is proper care of the mushroom. Otherwise, you risk getting something that resembles vinegar rather than a tasty drink. Or even worse - the kombucha grown with such care will simply die.

By the way, there is an excellent indicator of the health of kombucha - it should always be on the surface of the water. If your mushroom sank to the bottom, or refuses to float up again after adding tea leaves, there is a very high probability that it has become ill. If your kombucha gets sick, you made a mistake in caring for it. This means that it must be treated, and in all cases, without exception, the treatment is the same - cleanliness and proper care.

Liquid volume

As you remember, initially the jar contains a small amount of liquid - approximately 0.5 liters. But when the mushroom has already grown, there should be much more liquid - about three liters. It goes without saying that your kombucha is not a piece of decoration and you will drink it. This means that don’t forget to add fluid regularly.

To do this, you can use already dried tea leaves - pour boiling water over it, cool and add sugar, then pour it into a jar. There should not be too much sugar - no more than two tablespoons per liter of liquid. If necessary, it is better to add sugar to the cup of drink.

Many people do not strain the tea leaves - they simply add it. There is no harm in this for the mushroom, it just won’t be very convenient for you to drink the drink later. But there will be no harm only if all the sugar is completely dissolved - grains of sugar should under no circumstances come into contact with the surface of the mushroom.

Bath day

Once every two to three weeks, be sure to give your kombucha a bath day. Very carefully remove the mushroom itself from the jar and place it on a wide plate, being careful not to deform it too much. Thoroughly strain the liquid in which the mushroom was located using a gauze cloth and pour into a clean three-liter jar.

Place the plate with the mushroom in the sink and carefully rinse with warm (but not hot) water, leave in the air for a couple of minutes. Then also carefully transfer the kombucha into a jar and cover with gauze. That’s it, the “brainwash” of kombucha is over. It would seem like a completely simple procedure, which is very easy to do, and it is thanks to it that your kombucha will be healthy.

Otherwise, the mushroom will begin to hurt - first it will acquire a brown tint, and then it will begin to separate completely. It is very difficult to save such a mushroom, and in most cases it is easier to grow a new one. And drinking a drink from such kombucha is generally not recommended, because it not only loses its benefits, but moreover, it becomes dangerous to health. Remember that the kombucha infusion should always be extremely clear.

Storing Kombucha

Another necessary condition for the health of kombucha is its proper storage. Firstly, the temperature – it should only be high enough when growing kombucha. Then the optimal temperature should not exceed 18 degrees. Secondly - illumination. For the normal functioning of kombucha, light is simply necessary, and the daylight hours should be at least 8 hours. But direct sunlight must be avoided, so don’t make the very common mistake of placing a jar of kombucha on the windowsill.

Benefits of Kombucha

It’s impossible not to at least briefly mention the beneficial properties of kombucha - after all, it’s not for nothing that you bother with it?

» Metabolism and immune system

The first thing worth mentioning is vitamins. The kombucha drink contains much more useful substances than the most expensive vitamin and mineral complex. Vitamins, minerals, carbonic, lactic and other acids, minerals, enzymes - this is not a complete list. Therefore, it is not surprising that a drink made from kombucha has a very positive effect on the functioning of the immune system and normalizes metabolism.

» Digestive tract

Gastritis, colitis, peptic ulcer of the stomach and duodenum, dysbacteriosis.
Just one glass of kombucha drink, drunk on an empty stomach, can improve the situation in just a week. And its regular use promotes complete healing. By the way, the drink eliminates even the most severe heartburn very well.

As you can see, there is nothing complicated in growing and caring for kombucha. Therefore, if you set out to grow this miracle mushroom yourself, go for it, because the benefits are obvious!
