No-bake lavash cake. Lazy Napoleon cake made from Armenian lavash. Step-by-step recipe with photos

Call me lazy, I won’t be offended :) But this cake is really tasty, nutritious, and not particularly harmful to your figure if you use low-calorie dairy products. Therefore, after trying the cake, I decided to share the recipe with you.

It’s easy to find the necessary ingredients: Armenian thin lavash, cottage cheese and yogurt.

To prepare a cake for one loved one, all the ingredients I specified in the composition are automatically divided in two, but since our family has a little more than one, I wanted to make more.

I cut the pita bread into “circles”. I admit honestly: I cut it with kitchen scissors, the child looked at it with undisguised interest (most likely a new idea was emerging in his brain) - after all, it turns out that not only appliqués can be made from paper, but also from bread :)

I coated each “crust” with filling, alternating cottage cheese and yogurt.
The result was a low cake, which I smoothly transferred to a cold place overnight.

And in the morning, a delicious dessert for breakfast is ready!
The fact that lavash is used is not noticeable. Somewhat reminiscent of a “wet” Napoleon. Cottage cheese goes well together. In general, as for me, it’s quite a filling and healthy breakfast.
If desired, you can decorate the cake with fruit and grated chocolate. In general, what you like. For some reason I immediately had my eye on kiwi here.

They devoured the cake very quickly, and didn’t have time to blink an eye. I think you need to make 3-4 pita breads))
Friendess TAKUV suggested this recipe to me, and special thanks to her for that!

Live well!
Thank you for your attention, Zoya :)

P.S. 1) indicated the time without soaking (all night).
2) I included the price for the whole cake.

Cooking time: PT00H15M 15 min.

Approximate cost per serving: 110 rub.

Homemade Napoleon cake is one of the most popular cakes. According to the classic recipe, it is prepared from thin crispy cakes with custard. In our case, we will prepare the Napoleon cake according to a simplified recipe, using lavash as a cake layer.

By using lavash instead of cake layers to prepare Napoleon cake, you greatly simplify your task, because baking cakes always takes a lot of time. And cottage cheese will make your dessert exquisite and tender.

Required Products:

  • Armenian lavash – 0.12 kg;
  • apples – 0.10 kg;
  • soft cottage cheese – 0.10 kg;
  • cottage cheese in a briquette – 0.22 kg;
  • egg – 1 pc.;
  • vanillin – 0.01 kg;
  • soda – ¼ tsp;
  • salt – 1 pinch;
  • sugar - to your taste.

Preparation:

Rinse the apples, cut off the peel and grate them using a grater with large holes. Then place in a well-heated frying pan and sauté until the apples become like puree and turn brown.

Good to know! It is best to choose sweet and not very dense apples.

Now let's prepare the curd and vanilla filling. In a deep bowl, combine soft cottage cheese, vanillin and sugar. Beat everything thoroughly. The mass should become homogeneous and smooth.

Cut the pita bread into square sheets. Their size depends on how you want the cake to look when finished cooking. You can make many small sheets, then you will get a small but tall cake. Or, on the contrary, cut large squares and make the cake lower but wider.

Place a clean and dry frying pan on the fire and, after heating it, dry the lavash sheets one by one. They should become crispy.

While the cakes are cooling, you need to prepare the next cream. In an enamel bowl, mix cottage cheese in a briquette, egg, sugar, salt and soda. Beat everything with an immersion blender and place on the stove. Cook until the mixture melts. And coat the cakes

Advice! This must be done quickly, since the curd mass hardens very quickly and then does not fit well.

Spread the first sheet of lavash with cottage cheese cream and egg, top with apple filling. Next, cover with a second sheet of lavash and grease it with curd-vanilla cream. Cover with the next sheet and repeat all over again until you run out of lavash sheets.

Leave the coated cake in the refrigerator for a while to soak and soften.

Remove the butter from the refrigerator in advance so that it reaches room temperature. Pour condensed milk into a bowl and add butter to it. Stir until smooth. This is what wakes up our cream.

Coat all sheets with cream, including the topmost cake layer. Crumble a dry layer of lavash and sprinkle it over the top of the cake. Place in the refrigerator to soak for at least an hour.

Dry the lavash sheets in a dry frying pan until completely dry. Chop two of them into small pieces and set aside for now.

Place a flat dish on the work surface and place a cooking ring of the appropriate size on it. Place the first sheet of pita bread on the bottom, cover with custard and cover with the second sheet. Do this with all the cakes. Sprinkle the top with prepared crumbs.

Ingredients for Napoleon cake

  • 3 packs of thin pita bread
  • 1 liter of milk
  • 3 eggs
  • 250 grams of sugar
  • 1 packet vanilla sugar
  • 30 grams starch
  • 60 grams flour
  • 200 grams butter

This cake is made from dried pita bread, which makes the cake very tasty.

Step-by-step recipe with photos

Step 1

We take our pita bread and cut each sheet into three parts. Makes 18 sheets.

Step 2

Preheat the oven to 200 degrees, and dry each sheet of pita bread for about two minutes. The drying procedure will take you no more than twenty minutes.

Step 3

The lavash sheets are dried, and while they are cooling, we move on to preparing the custard for our cake.

You can add both butter and boiled condensed milk to the custard, this will give your custard a richer taste.

Step 4

Pour the milk into a saucepan, add 125 grams of sugar, put it on the stove, and bring it to a very hot state, but not to a boil.

Step 5

Beat the eggs for one minute with the rest of the sugar until fluffy.

Step 6

Add starch with flour, vanilla sugar to the egg mass, and pour in one ladle of milk twice, stirring constantly.

Step 7

Pour the egg-flour mixture into the remaining milk, then place on medium heat, stirring continuously, until the mixture thickens. Remove the cooked cream from the stove and continue stirring for a few more minutes (one or two minutes)

To prevent the future cream from burning, try to stir as quickly as possible, especially along the bottom of the pan

Step 8

Cover the finished cream with cling film and let it cool completely to room temperature.

Step 9

Beat softened butter. Hard butter can be softened in the microwave or on the stove.

Step 10

Add all the custard to the butter little by little, remembering to stir.

To prevent the cream from being liquid, it must be added to the oil cooled, at room temperature.

Step 11

The cream is ready. We move on to coating our finished, pre-dried cakes. Distribute a small amount of cream evenly, lightly pressing each cake.

Don’t forget to leave a couple of cake layers for sprinkling the cake, chopped nuts will also work,

Step 12

The smeared cakes will settle a little after half an hour, but to make the cake taller, you need to cut it in half two hours after soaking, and lay it on top of each other, giving it more time to soak a little.

I won’t bore you any longer, let’s see how to make a lazy Napoleon cake from Armenian lavash. For your convenience, I have prepared the recipe in the form of step-by-step instructions with photographs.

  • Armenian lavash – 8 pcs.
  • Milk – 1 l
  • Eggs – 3 pcs.
  • Flour – 3 tbsp. l.
  • Sugar – 150 g
  • Butter – 50 g

Stages of preparing Napoleon cake from lavash

  1. It is advisable to immediately buy round lavash. Round tortillas will do. But if you have large rectangular sheets, then cut out round sheets from them using a plate of the required diameter.

    If the pita bread is very thin, then the number of layers in the cake should be greater. The advantage in this case is that such a cake will soak faster.

  2. Let's cut out round cakes from all the pita breads (I got 16 pieces).
  3. Dry the pita bread in a dry frying pan for about 1 minute (no need to add oil!) It is better to use a Teflon-coated frying pan.
  4. Turn it over to the other side and, also at medium heat, fry the cake until it becomes brittle (i.e., each cake should be well dried).
  5. Now let's start preparing the custard for the cake. Place eggs and sugar in a saucepan.
  6. Using a mixer, beat the eggs until fluffy and increased in volume.
  7. Place the sifted flour into the egg mixture.
  8. And again, mix the products with a mixer until the egg mass thickens.

  9. Place the pan on the stove and cook the cream over low heat with continuous stirring (to avoid the appearance of lumps) until the first bubbles appear.
    Then remove the pan from the stove and add the butter. Stir until it melts and distributes throughout the mixture.
  10. Let's start assembling the cake. Place a sheet of lavash on a dish.

  11. Let's do a similar procedure with all the pita breads and cream. We will also grease the sides of the cake.

  12. Sprinkle the cake well with ground lavash (otherwise the top layer of cream will dry out, crack and take on an unappetizing appearance).
  13. Place the Napoleon cake in the refrigerator to soak for 1-2 hours.

Lazy Napoleon cake made from Armenian lavash turns out very tasty and tender, it just melts in your mouth! The recipe will be a lifesaver for you when there is little free time to bake complex products.
