How to cook potato casserole according to the recipe, with photos

From the inventory you will need a cutting board, a fairly sharp knife, a grater and a fireproof glass mold designed for 1.5 liters (or any other of the same volume in which you can bake).

Thoroughly washed and peeled potato tubers are cut crosswise to a width of 5 mm.

Mostly hard cheeses are used for casseroles. When crushed, it is mixed with other products or sprinkled on top of the casserole to get a golden brown cheese crust on its surface. Grind the cheese with a grater.

You can take any sausage, either boiled or smoked, as long as it does not contain large pieces of lard. Sausage products are cut according to the recipe, pieces of sausage are mixed with the main mass or interlayered with them.

Casserole dishes are placed only in a well-heated oven and baked for a certain time, at the temperature specified in the recipe. After baking, the dish is kept in the mold for about a quarter of an hour and only then cut into pieces.

Casseroles with sausage and cheese can be served for both breakfast and dinner. The dish is quite high in calories and nutritious.

Sausage and Cheese Casserole with Mashed Potatoes

Ingredients:

Half a kilo of potatoes;

200 gr. boiled “Doctor’s” sausage;

Cheese, “Russian” – 150 gr.;

Two onions;

Two full glasses of cow's milk;

A teaspoon of 72% butter;

Three spoons of white flour.

Cooking method:

1. Place the pasta in slightly salted boiling water and boil. To ensure that the pasta in the casserole keeps its shape well, remove from the heat, slightly undercooking. Determine the degree of readiness by biting into the pasta. If it is already soft on top and elastic enough inside, you can remove it from the heat.

2. Discard the boiled pasta and rinse in a colander with warm water, stir with melted butter.

3. Cut the tomatoes into thin slices, and both types of sausage into strips.

4. Grease a small deep mold well with soft butter and spread the pasta evenly in it. Place sausage on top, mixing both varieties, and place tomato slices on its surface.

5. Beat the eggs with a whisk, add them to the milk and stir well with the same whisk. Without ceasing to stir, gradually add flour, breaking up the lumps well, the mass should be homogeneous.

6. Pour the prepared filling into the mold so that it does not reach the edges of the casserole by 1 cm and cover the top of the dish with grated cheese.

7. This casserole is baked at 200 degrees for no more than 30 minutes.

Easy Bread Casserole with Sausage and Cheese

Ingredients:

300 ml pasteurized fat milk;

Three spoons of Dijon mustard;

12 slices of white “toaster” bread;

Cheese, “Russian” variety – 200 gr.;

Parmesan cheese – 100 gr.;

Young onion feathers;

Nine eggs;

450 gr. chicken ham or low-fat boiled sausage.

Cooking method:

1. Cut the ham (sausage) into small pieces. Grate Parmesan and Russian cheese into separate bowls using a medium grater. Wash the onion feathers, wipe dry with a towel and cut into small rings.

2. Break eggs into a bowl and add mustard to them. Add half a spoon of fine salt and a quarter spoon of freshly ground pepper. Whisk, add milk and mix well.

3. Place six slices of bread on the buttered bottom of the pan.

4. Fill the glass three-quarters full with ham and distribute it evenly over the bread.

5. Sprinkle 3/4 cup of Russian cheese crumbles on top of the ham layer, and two spoons of Parmesan on top.

6. Sprinkle the cheese layer with a third of the green onions and pour half of the milk-egg dressing over everything. Then repeat all the layers again, starting with the bread layer and ending with the onion layer.

7. Pour the remaining milk-egg mixture into the mold, cover with foil and refrigerate.

8. After 8 hours, remove and bake in a gas oven preheated to 175 degrees for one hour. Do not remove the foil from the pan, bake under it.

9. Let the finished casserole rest for 10 minutes and serve, cutting into portions.

Cottage cheese casserole with sausage and cheese

Ingredients:

Low-fat, grainy cottage cheese – 300 gr.;

One raw protein;

A few slices of boiled sausage;

Small tomato;

Cheese, “Kostromskoy” or “Russian” varieties – 100 gr.;

Fresh herbs - parsley, dill, to taste.

Cooking method:

1. Take a small plate-sized foil pan and grease it with butter.

2. Evenly spread tomatoes cut into rings along the bottom and sprinkle them with finely chopped herbs.

3. Mash the cottage cheese well and mix it with the beaten egg, pour the mixture into the mold over the tomatoes, and smooth it out.

Ingredients:

Half a kilo of low-fat boiled sausage;

Three heads of bitter onions;

70 gr. half-smoked sausage;

Cheese, “Dutch” or “Russian” varieties – 80 gr.;

200 gr. long grain rice;

100 ml low-fat sour cream;

Small carrots – 2 pcs.;

Refined vegetable oil;

To taste – hops-suneli.

Cooking method:

1. Rinse the rice with cold water, changing it several times. Carefully shake off excess moisture, pour 600 ml of cold water into the cereal, add salt and place on high heat. As soon as the water boils, stir the rice, reduce the heat to low and cover with a lid. Cook until the grains soften. Place in a colander and wait until all the broth has drained. Do not rinse.

2. Place the onion, chopped into half rings, into the oil heated in a frying pan. Add large carrot sticks and fry until light golden brown. Add vegetables to rice and mix well.

3. Cover the pan with parchment and place half of the rice in it. Cut the boiled sausage into pieces of any size, but not too large, and spread them evenly over the rice. Try to ensure that the sausage pieces fit snugly against each other and leave no gaps.

4. Sprinkle the khmeli-suneli sausage and evenly spread all the remaining rice on top. Apply a thin layer of sour cream over the entire surface and gently spread it with a spoon.

5. Sprinkle with small smoked sausage strips and finely grated cheese.

6. Bake the rice casserole at 200 degrees for 15 minutes.

Vegetable casserole with sausage and cheese

Ingredients:

300 gr. sausages or boiled sausage;

Five eggs;

300 gr. young zucchini;

Cauliflower – 300 gr.;

Carrots – 300 gr.;

White ground crackers – 50 gr.;

Fresh herbs – dill, parsley;

Cheese, “Kostromskaya” variety – 200 gr..

Cooking method:

1. Cut the zucchini and carrots into large rings, divide the cabbage into inflorescences.

2. Dip the vegetables into lightly salted boiling water and boil for three minutes, then drain in a colander and wait until all the liquid has drained.

3. Chop the greens with a knife, beat the eggs with salt and ground pepper. Grate the cheese on a coarse grater and cut the sausages into slices.

4. Coat the inner surface of the mold with butter and sprinkle thoroughly with ground breadcrumbs. Place blanched vegetables, and pieces of sausages on their surface, pour eggs over everything.

5. Place the vegetable casserole in a hot oven (200 degrees) and leave in it for a quarter of an hour. Then remove, sprinkle with grated cheese crumbles and put back in the oven for another 10 minutes.

Never boil cereals and pasta for casseroles until fully cooked. In order for such products to hold their shape well in a casserole, they must be slightly undercooked. They will finish cooking in the oven.

To prevent vegetables from turning into mush when baking, boil them in lightly salted water for no more than three minutes in advance.

To ensure that the casserole easily moves away from the edges of the pan and does not burn, grease its bottom and sides with butter and then sprinkle it well with breadcrumbs.

For casseroles that add tomatoes, try to use meaty, non-watery varieties of tomatoes or choose seeds from them.

It is advisable to cut the hot casserole with sausage and cheese while it is hot, before the cheese crust has cooled. Otherwise, it will become harsh and you won’t be able to cut the dish neatly.
