Curd cheesecakes with banana. Cheesecakes from cottage cheese with banana Cheesecakes with banana cottage cheese 330 grams

Lately, I often buy cottage cheese - my son’s growing body, and I myself, as a nursing mother, need dairy products. By the way, if you think that cottage cheese contains a lot of calcium, then I hasten to assure you: a much larger amount. 😉 So, I’m talking about cottage cheese. It often happens that we don’t have time to eat a half-kilogram pack of cottage cheese, and then I make cheesecakes.
A few years ago, my cheesecakes turned out liquid and spread all over the pan for no reason. But my aunt taught me how How to cook cottage cheese pancakes correctly. And now I'm sharing the improved recipe: cottage cheese pancakes with banana. In fact, the process of making cheesecakes with and without banana is almost identical. I think as you go along, you will figure out what's what.

I can’t say that this is a recipe for cottage cheese pancakes with banana - it’s exclusively my invention; there are probably a lot of recipes on this topic on the Internet. But I will tell you and show you exactly how to make delicious cheesecakes.

Let's take:

  • 0.5 kg of cottage cheese (mine is not sour, 5%)
  • 2 eggs
  • 2 bananas (you can take 1, but two are tastier 🙂)
  • 2 table. spoons of sugar
  • 0.5 tsp salt, 0.5 tsp. soda
  • 5 table. spoons of flour (heaped)
  • vegetable oil for frying

We will need two separate bowls. This is the most important secret of making the right cheesecakes from cottage cheese: sugar and eggs need to be mixed separately and added to the cottage cheese at the very last stage - just before frying.

So, you need to pour the cottage cheese into one larger bowl and add flour there. Mix flour and cottage cheese thoroughly.

In a second, smaller bowl, grate the bananas on a coarse grater (you can just mash them with a fork - it will be faster).

Add sugar, salt, soda (you can quench it with 1/2 tsp lemon juice or 9% acetic acid, or you don’t have to quench it - I often don’t quench it anymore), eggs. Mix everything thoroughly.

Place a frying pan on the stove, preferably ;). While the pan is heating up, add the egg-banana mixture to the cottage cheese and flour and stir quickly until the mixture becomes homogeneous.

The result will be a fairly thick mixture, which can be spooned into a frying pan, or you can form “pancakes” with your palms. When the frying pan is hot, pour in vegetable oil (they say you can fry in a ceramic frying pan without oil, but it doesn’t work out that way for me, you still need a little oil...) and immediately put it out. I fry on 5 (the maximum number on my burner is 6).
The dough for cheesecakes needs to be fried immediately so that it does not stand even for 15 minutes... Because then the cottage cheese will “give juice” and the cheesecakes will lose their appearance and will not be easily removed from the pan...

Cheesecakes are a wonderful, easy-to-prepare breakfast dish that both adults and kids enjoy eating. To diversify your favorite recipe, make it more aromatic and healthy, add 1-2 ripe bananas to the cottage cheese - they will add the necessary sweetness and you will need much less sugar, and your breakfast will be provided with a hearty and healthy dish.

Find out about the secrets of making cheesecakes with banana and cottage cheese - a step-by-step recipe with photos on our website.

In order for cottage cheese pancakes with banana to turn out beautiful, smooth and moderately dense, it is important to choose the right ingredients. Use only granular cottage cheese with a fat content of 5 to 15%, moderately dry, not watery. Too fatty cottage cheese will begin to melt as soon as it hits the hot frying pan, and low-fat cottage cheese will make the dish tough.

Bananas must be ripe or even a little overripe, and then you won’t have to add refined sugar - in this form the dish is perfect for nutrition (proper nutrition).

Do not mash fruit into puree under any circumstances, this will make the curd mass too liquid. In this case, you will have to add significantly more flour and then you can forget about proper nutrition.

Soda has the property of binding casein, which is found in fermented milk products, and promotes its better digestion. A very small amount of soda is enough to facilitate the digestion process, no more than 1/5 of a teaspoon. If you put more in the dough, it will spread throughout the pan during frying, so for cottage cheese dishes it is important to maintain the correct proportion of ingredients.

You can also make cheesecakes from cottage cheese and banana without flour. You can exclude flour from the recipe and cook with semolina. Simply replace one product with another, let the curd dough rest for 15-20 minutes, and then fry as indicated in the step-by-step instructions.

Cheesecakes with banana destroy the established opinion that only raisins are ideally combined with cottage cheese. Tender banana pulp fits perfectly into the structure of the curd dough, giving it a unique soft aroma and a light golden hue.

Bananas can be cut into pieces, each of which will become a version of the original fragrant filling. Cheesecakes with fruit additives need careful breading, especially if the cottage cheese is quite liquid.

The dish is served hot with sweet vanilla sauce, sour cream, whipped cream or bright jam with whole berries.

  • cottage cheese - 220 g
  • banana - 180 g
  • chicken egg - 1 pc.
  • sugar - 2 tbsp. l.
  • salt - ¼ tsp.
  • baking powder - 2 pinches
  • wheat flour - 4 tbsp. l.
  • corn flour - for breading
  • sunflower oil - for frying

To prepare, take high-quality cottage cheese with a fat content of 5 percent or more. For those who like a more uniform texture of the dish, we recommend rubbing the cottage cheese through a fine strainer.

Transfer the product into a convenient container for kneading dough. Beat in the chicken egg and, thoroughly mashing with a fork or spoon, mix to remove large pieces.

Add granulated sugar and salt. Stir until both ingredients are evenly distributed throughout the curd mixture. At this step you can add a little vanilla or vanilla sugar.

Wash the banana and remove the peel. Cut the pulp into small pieces. Add it to the rest of the ingredients and stir. Use a ripe and flavorful banana. You can grate it on a coarse grater for a more uniform texture.

Add sifted wheat flour and baking powder. Stir. You can start forming cheesecakes.

Wheat flour can be used for breading, but cornmeal adds a sunnier flavor to the finished dish. Take a small amount of curd dough with a spoon and dip it into the yellow flour. Roll on all sides. Form a yellow sun using a wide knife or your hands.

Add a little vegetable oil to the frying pan. Place on fire and heat well. Place the prepared pieces. Fry over moderate heat until golden brown on both sides.

Prepare a flat plate with a paper towel in advance and place the finished cheesecakes on it to remove any remaining oil. Serve immediately to keep the dish warm.

Recipe 2: cheesecakes with banana (step-by-step photos)

Cheesecakes with banana are an easy-to-prepare, but at the same time quite unusual cottage cheese dish that can pleasantly surprise and delight all family members.

Cheesecakes with banana, the recipe for which I want to present today, are quite simply and quickly prepared in a frying pan and can serve as an excellent breakfast, afternoon snack and even a self-sufficient dinner, since they can saturate well and supply the body with a full set of all necessary substances.

  • 500 g cottage cheese 5 - 9%
  • 4 tbsp. l. Sahara
  • 2 small eggs
  • 4 tbsp. l. flour
  • 1 banana
  • a pinch of salt
  • 3 tbsp. l. vegetable oil

Breading:

  • 2 – 3 tbsp. l. flour

To prepare cheesecakes with banana inside, place cottage cheese, salt, sugar and chicken eggs in a deep bowl.

Mix all ingredients thoroughly with a fork into a homogeneous creamy mass.

Add flour and knead the dough again with a regular fork. The dough for cheesecakes should be dense, but a little sticky.

Peel the banana and cut into slices 5–7 mm thick. It is advisable to cut the banana diagonally so that the circles are larger and feel better inside the cheesecakes.

Now you can start making original cheesecakes with a banana circle inside. To make it easier to work with sticky curd dough, I suggest doing the following. Pour 2 - 3 tbsp into a plate with small sides. l. flour and using a large spoon, place a portion of dough into the flour for one cheesecake.

Lightly roll a piece of dough on all sides in flour so that it does not stick to your hands, and make a flat cake out of it the size of your palm. Place a banana slice in the center of the cake.

Pull the edges of the tortilla up and bring them together over the banana. Carefully seal the dough so that the filling is completely inside, and lightly roll the finished cheesecake in flour.

Heat the vegetable oil well in a frying pan and place a portion of cheesecakes, not too close to each other, so that it is easier to turn them over. Cook over medium heat, uncovered, for 2 to 3 minutes until browned.

Carefully turn the cheesecakes over to the other side with a spatula, fry for another 1 - 2 minutes, then cover the pan with a lid and cook over low heat for 8 - 10 minutes. At the same time, the cheesecakes will rise well and become fluffy and airy, however, if you do not eat them immediately after cooking, they will settle a little as they cool.

Be sure to serve cheesecakes with banana while it’s piping hot, while they are so tall, beautiful and appetizing! In addition to them, fresh cool sour cream and, of course, a cup of tea or coffee are perfect. Bon appetit!

Recipe 3, step by step: cheesecakes with banana in the oven

I decided to diversify our curd menu and make cheesecakes with banana in the oven. This will be a doubly healthy dish (banana contains potassium, which is very good for the heart and skin).

And since we will make these cheesecakes in the oven in special molds, you don’t have to worry about the quality of the curd consistency - whether the curd mass will spread or not - the cheesecakes will still not fall apart, will bake evenly and, in addition, will have an attractive shape (which is especially important for children like). For example, in the shape of ruddy apples.

So, study my recipe, see my cooking photos.

  • 250 g cottage cheese (I take village cottage cheese - I buy it at the market - but you can use any other)
  • 1 egg
  • 1 banana
  • 2 tablespoons sugar
  • 2 tablespoons semolina
  • salt on the tip of a knife
  • 1 packet of vanillin
  • ½ teaspoon baking soda
  • ½ teaspoon vinegar

I put the cottage cheese in a convenient container (not too wide and deep enough):

Mash the cottage cheese with a potato masher so that there are no lumps and the consistency is very tender and soft (after this procedure, even store-bought cottage cheese will become much more tender):

I throw one raw egg into a separate wide bowl:

I also throw in 1 packet of vanillin, 2 tablespoons of sugar, 2 tablespoons of semolina (I prefer semolina to flour, because the cheesecakes turn out tastier; flour overpowers the curd flavor and makes the cheesecakes denser, while semolina, on the contrary, emphasizes the curd flavor and the cheesecakes turn out very well tender) and salt on the tip of a knife (in principle, you can do without salt, but I like it when salt is present even in a sweet dish):

Mix everything thoroughly:

Now we need to add more soda, slaked with vinegar - for the splendor of future cheesecakes.

I take a tablespoon, pour half a teaspoon of soda into it, then add half a teaspoon of vinegar and wait for the soda to completely dissolve in the vinegar:

And then I add this mixture to our bowl with the egg and mix everything again. You will get this fluffy egg mixture:

Now it’s time to add our mashed tender cottage cheese to the bowl (I forgot to take a photo).

After this, I peel the banana and cut it into small cubes:

And I throw the chopped banana into the egg-curd mixture:

And mix everything thoroughly:

Some people beat the banana in a blender (grind it to the level of a curd mass), but I like it in pieces. Then it will be clearly felt in the finished cheesecake, giving it a more appetizing appearance and exotic taste.

You can safely stir the banana pieces; they are quite hard and do not fall apart.

When everything is mixed evenly, you can pour our curd mass into molds:

Do not pour to the brim - because the curd may still rise.

And put it in the oven, heated to 180 degrees for 30-40 minutes.

The cheesecakes are browned, which means you can take them out:

Place them on a plate.

The cheesecakes taste like a miracle, amazing. Delicate, airy. The banana baked inside gives the taste an amazing exotic sourness.

Add banana puree and a chicken egg beaten with sugar to the pureed cottage cheese.

Mix everything thoroughly so that there are no lumps left.

Sift 100-130 grams of wheat flour with baking powder.

Add vanilla sugar to the curd mass, and then gradually add flour and baking powder in small portions. You will end up with a thick and satisfyingly sticky dough.

Serve the finished tender cheesecakes with banana hot, adding yogurt, sour cream or honey if desired.

Recipe 6: homemade cheesecakes with banana (step by step)

The traditional taste of cheesecakes can be diversified, made warmer and brighter by adding banana pieces to the dough. Their taste, sunny and delicate, really pleases, especially young gourmets. The fastest way to cook cheesecakes with banana is probably in a frying pan. But the dietary option is cheesecakes in a slow cooker or in the oven.

  • cottage cheese 300 g
  • small egg 1 pc.
  • banana 1-2 pcs.
  • flour ½ or more tbsp.
  • sugar to taste
  • vegetable oil 3-4 tbsp.

We prepare the ingredients for making cheesecakes with banana.

For preparing the dish, choose ripe, sweet bananas. If bananas are sweet, then you don’t need to add sugar: the cheesecakes will turn out naturally sweet.

I used dry cottage cheese in my recipe. Therefore, we didn’t have to add a lot of flour, and the cheesecakes turned out tender and airy.

Before use, the cottage cheese can be rubbed through a sieve to make it homogeneous. This way the cheesecakes will be more tender. And you don’t have to add baking powder or soda.

Add the egg and finely chopped banana pieces. I pre-rinse the egg in the shell and the banana in the peel with running water to prevent the entry of germs. It is better to cut bananas, since cubes allow the product to better hold its shape. While a banana crushed in a blender to a paste will only make the dough liquid.

Add enough flour to make the mixture thick and not very sticky. But you shouldn’t add too much, so as not to spoil the taste of the cheesecakes. You can then roll the cheesecakes in flour to keep their shape.

We tear off small pieces from the dough, roll into balls and flatten, giving the appearance of cheesecakes.

Meanwhile, heat a frying pan with oil well.

If desired, lightly bread the cheesecakes in flour and place in a frying pan. Fry over medium heat, first on one side, then on the other until golden brown.

Recipe 7: diet cheesecakes with banana (with photo)

Cheesecakes made from cottage cheese with banana (the recipe with photos will show each step step by step) will turn out a little denser than regular ones, only from cottage cheese. A mashed banana makes the cottage cheese liquid, and to thicken it, more flour is added in this recipe, which does not impair the taste at all. You will need to add one or two more spoons to the standard proportion (3 tablespoons of flour per pack of cottage cheese), but these are only recommendations; you can prepare cheesecakes that are more delicate in consistency. Depending on what additives you serve them with, the cheesecakes will have a different taste, but the banana aroma will remain in any case.

  • cottage cheese (not watery, well squeezed) – 200 g;
  • egg – 1 pc;
  • thick sour cream – 1 tbsp. spoon;
  • flour – 4-5 tbsp. spoons + flour for cutting (2-3 tbsp);
  • sugar – 1.5 tbsp. spoons;
  • banana – 1 small;
  • salt - a pinch;
  • vegetable oil – 3 tbsp. spoons.

To prepare cheesecakes from cottage cheese and banana, beat the egg and sugar with a whisk. In principle, if the banana is sweet and you want to reduce the calorie content of the cheesecakes, then you don’t have to add sugar. But often you come across bananas that are not ripe, they have almost no sweetness - in this case you cannot do without sugar or serve the finished dish with some sweet sauces.

The recipe uses homemade cottage cheese, it is flaky, fatty, and well pressed from the whey. If you bought it at the store and the cottage cheese is wet, hang it in a gauze bag over the sink or add more flour. For a more uniform consistency, the cottage cheese should be mashed with a masher or fork.

Add the egg beaten with sugar to the mashed cottage cheese and mix. At this stage, you can add vanilla sugar or any aromatic additives.

Mash the banana with a fork into a paste. Add to the curd mass, mix everything.

Sift the flour into a bowl with the curd mass, add a tablespoon at a time. Be sure to stir to control the consistency. You should get a viscous mass that will stick to the spoon.

Sift two or three tablespoons of flour onto a cutting board. Spread half the curd mass - this will make it easier to form the cheesecakes.

Roll in flour; the cottage cheese will take up about a third of the flour. You need to get such a consistency that you can roll a sausage with a diameter of about 5 cm.

Using a knife, cut the sausage into 4-5 pieces. Roll each one in flour, make a ball, then form a flat cake about 3 cm high. Transfer the curd-banana cheesecakes to a plate sprinkled with flour. We put the remaining cottage cheese on the board and make cheesecakes from it in the same way.

Heat the oil in a deep frying pan. We lay out the cheesecakes not close to each other. Fry over a low-medium heat; with a high flame, they will burn on the outside, but the inside will remain damp and heavy.

In three or four minutes the cheesecakes will brown and turn golden. Turn them over with two forks or a spatula and fry the other side. The time is also about three minutes. The fire can still be turned up, the oil is already hot, the temperature will be sufficient for even frying of the cheesecakes.

Serve the curd-banana cheesecakes hot, topped with pieces of fruit, sour cream, honey or any other sweet sauce. If you have frozen berries, chop them with sugar - this will also be a tasty and healthy addition to cheesecakes. Bon appetit!
