Cheesecakes with semolina

Ingredients:

  • 200 g of your favorite cottage cheese;
  • 1 piece chicken egg;
  • 3 tablespoons of semolina;
  • 50 grams of raisins;
  • 50 grams of walnuts;
  • 2 tablespoons of sugar.

Cooking method:

I rub the cottage cheese through a sieve or pass it through a meat grinder.

Pour boiling water over the raisins for a few minutes to soften them.

I chop the walnuts, but not too much. I cut them with a knife so that they can later be heard in cheesecakes.

I mix semolina with pureed cottage cheese, add granulated sugar, and then walnuts and softened raisins.

I form the cheesecakes into flat cakes and cook them in a heated frying pan with vegetable oil. Fry on both sides until golden brown over medium heat.

Cheesecakes with a crispy crust and condensed milk

This recipe is a little more difficult to make, but the finished cheesecakes will come with a surprise, that is, with filling.

Ingredients:

  • 300 grams of your favorite cottage cheese;
  • 3 tablespoons of wheat flour;
  • 1 piece chicken egg;
  • 1 tablespoon granulated sugar;
  • 8 teaspoons of boiled condensed milk.

Cooking method:

First I prepare the dough. I grind my favorite cottage cheese of any fat content with granulated sugar, add wheat flour and knead the dough. I stir until a homogeneous consistency.

I form each part into a flat cake.

I put the filling in the center of each flatbread, namely boiled condensed milk. I put a teaspoon on each scone.

I wrap the edges of the flatbread, secure them, and level the resulting cheesecake.

These cheesecakes can be fried in a frying pan, but I still prefer to cook them in the oven. Bon appetit!

3. Combine the dough with whipped whites mixed with powdered sugar.
4. Place the dough in a mold greased with butter and sprinkled with breadcrumbs. Bake the cheesecake at 180°C for 35–40 minutes.

Recipe: Lviv cheesecake - with raisins and ground tangerine crusts

Ingredients:
raisins - a handful;
water - 1 tsp;
semolina - 1 tbsp. l. with a slide;
cocoa powder - 2 tbsp.

l.;
sour cream 20% - 2 tbsp. l.;
chicken eggs - 4 pcs.;
butter - 150 g;
fat cottage cheese - 500 g;
granulated sugar - 1 tbsp;
ground tangerine peels - 1 tsp.

I spied this recipe from one hostess in the same topic. And I wanted to bake the same one so much that I couldn’t resist and went to the market to buy cottage cheese.

Yes, it is true that they say that the same recipe turns out differently for every housewife. The oven also plays a role here. After all, in one oven at 180° the dough doesn’t even want to rise, but in another it burns.

The products are also different. Even the energy of the cook matters.

In short, I bought cottage cheese, sour cream... And it’s good that there was a reserve. Because I cooked cheesecake... for two days! That is, I didn’t succeed the first time. Then I started experimenting. At first I didn’t want to photograph the first sample (and the second one too), but I think my mistakes will be useful to the hostess who, like me, wants to bake Lviv cheesecake. Therefore, I describe everything as it happened. I hope you have the patience to read to the end.

But first things first.

I made the cheesecake according to the recipe.

The only thing I replaced was the zest. I put ground tangerine peels in the dough. I prepare them in winter, when there are often tangerines at home. I peel the white skin off the crusts, dry them, and then grind them in a blender.

How I made cheesecake. Take 1.

First, I thoroughly ground the cottage cheese. I did not rub it through a sieve, but used an immersion blender. I put cottage cheese in a bowl and immediately cut the butter into pieces (I left 50 g for glaze). I crushed it into a curd mass (I accidentally deleted the photo, but it turned out to be a homogeneous white fatty mass).

In another bowl I put 150 g of sugar (reserving the rest for icing) and eggs.

Using a blender, beat the egg mixture until almost white.

Place the egg mixture into the bowl with the curd mixture. Immediately I put semolina, vanillin and tangerine peels here.

I mixed it with a blender, changing the attachment.

I added washed and dried raisins.

I mixed and left the dough alone for about thirty minutes to allow the semolina to swell.

In a separate bowl, beat the egg whites with a pinch of salt until stiff.

Placed the egg whites in a bowl with the curd mixture.

Gently mixed from top to bottom with a wooden spatula, being careful not to destroy the bubbles from the protein foam.

I greased the silicone mold with oil and put the curd dough into it. Leveled it out.

I put the mold in the oven, heated to 180°. I baked it for an hour as stated in the previous recipe. During this time, my cheesecake rose so well that I couldn’t be happier!

When I took it out of the oven, then... it fell off! Of course, I was ready for it to fall off, as the previous owner’s recipe said, but I didn’t expect it to fall so much!

As you can see, how low he turned out! But it was higher than the edges of the form!

What to do? I waited until it cooled in the pan, and then put it on a baking sheet to completely cool.

The glaze needs to be prepared when the cheesecake has cooled. To do this, I poured the remaining sugar into a bowl, put sour cream and cocoa. I poured a teaspoon of hot water.

I placed the bowl in a pan of boiling water. Stirring the ingredients, I waited until they dissolved well in a water bath and turned into glaze. Bring the glaze to a boil. You can, of course, cook the glaze in a regular ladle, but then it can simply burn.

I took the saucepan off the heat and added butter to the glaze. Grind until smooth.

I poured hot glaze over my low cheesecake. Placed it in the refrigerator to cool.

The cheesecake turned out very tasty and soft!

It is somewhat reminiscent of glazed cheese. But for some reason it came out low! I could have left it like that, but I’m meticulous! Therefore, I decided to correct the situation by making another cheesecake! I decided that something was wrong with the recipe.

So... Take 2.

I decided to slightly change the composition of the ingredients, thinking that apparently there wasn’t enough semolina, so the cheesecake didn’t rise.

Therefore, I did everything as in the first method, or rather, in the first take. Until the moment when it was necessary to put in semolina. But, to be honest, I didn’t grind the cottage cheese very well. Then, instead of one spoon, I put two semolina to make the dough a little thicker.

I left the dough for half an hour for the semolina to swell.

As you can see, the dough has actually become thicker.

I prepared a detachable round mold because the silicone one was busy. I greased the mold, lined it with parchment and put the dough in it.

I baked, as in the first case, at a temperature of 180°, but not for an hour, but for 50 minutes.

The cheesecake was not taken out of the mold until it had cooled to a warm state.

I put it on a dish.

And what do you think? As you can see, the cheesecake did not fall off. But... it didn’t look like a cheesecake!!! Now I have a banal cottage cheese casserole! Yes, tasty, but not what I expected in the end!

Prepared chocolate glaze. The resulting cheesecake was poured with hot glaze. I put it in the refrigerator.

Today we invite you to learn how to cook perfect, homemade cheesecakes, which are exquisitely tender on the inside and covered with a golden crust on the outside. In addition, you will learn the secret of preparing excellent salty cheesecakes with basil and mushrooms.

1. Recipe for sweet cheesecakes with raisins(“Everything will be delicious”).

Set of ingredients:

Three hundred grams of cottage cheese;

two raw eggs;

one hundred grams of white sugar;

light raisins - about 150 grams;

wheat flour (sifted) - two hundred grams;

to taste - ground cinnamon and salt.

Technology for preparing sweet cheesecakes:

First, grind the cottage cheese using a sieve, then divide two chicken eggs into yolks and whites. Beat the white part of the eggs with a pinch of salt (small), and grind the egg yolks with granulated sugar.

Add raisins, previously soaked in warm water, and then dried with paper napkins. Mix the cottage cheese and raisins thoroughly, add eggs and ground cinnamon.

Form cheesecakes, roll them in sifted flour and fry in a well-heated frying pan with sunflower oil on both sides until golden brown.

2. Recipe for salted cheesecakes with mushrooms(“Everything will be delicious”).

Grocery list:

fresh cottage cheese - 250 grams;

sifted flour - two hundred grams;

mushrooms - about 250 grams;

a head of mild onion;

to taste - fresh herbs;

two raw chicken eggs;

a teaspoon of rock salt;

three grams of ground pepper;

sunflower oil - 250 grams;

a pinch of baking soda.

Technology for preparing salty cheesecakes:

Crumble the cottage cheese. Chop the peeled onion and fresh mushrooms quite finely, then fry the ingredients in two separate pans. Then mix the mushrooms and onions, add salt and a little pepper to them. Add the greens there, mix it all and cool the filling.

Add the egg and soda dissolved in vinegar to the sifted flour. Mix this with crushed curd. Form neat cheesecakes from the prepared curd dough and mushroom filling.

Fry them in a sufficient amount of hot refined oil until nicely golden on all sides.

3. Sweet cranberry sauce for cheesecakes(“Everything will be delicious”).

The ingredients are as follows:

cranberries - 75 grams;

granulated sugar - two large spoons;

lemon zest - to taste.

Cooking process:

Add one and a half large spoons of water to the cranberries and heat in a saucepan. When the berries become soft, drain them using a sieve. Add granulated sugar and lemon zest to the cranberries. Bring the sauce to a boil while stirring thoroughly. When the mixture begins to caramelize, turn off the heat.

4. Spicy cranberry sauce for cheesecakes(“Everything will be delicious”).

List of components:

75 grams of cranberries; a couple of cloves of garlic;

to taste - granulated sugar, lemon zest, salt and finely ground pepper.

Cooking process:

Add one and a half tablespoons of water to the berries and heat it in a saucepan. After softening the cranberries, rub them through a sieve. Add chopped garlic there, pepper it all to taste, season it with a little sugar and lemon zest. Stirring the sauce constantly, bring it to a boil. The cheesecake should be served with herbs and cranberry sauce.
