How to cook Olivier with squid “Snowman”

Wash medium-sized potatoes and carrots thoroughly and remove dirt. Then pour cold water over the vegetables and boil in their skins until tender. We also wash the chicken eggs and boil them hard in a separate saucepan. After boiling, cool the ingredients.

Peel the potatoes and cut them into cubes, but not finely.

Cut off the tip of the peeled carrot, about 1.5-2 cm long. We will need it for decoration. Cut the rest of the carrots into cubes.

We peel the eggs and rinse them under running water to remove all the smallest shells. We remove the whites from two eggs and put them aside, from which we will make a snowman’s snow cover. Cut the remaining yolks and one egg into cubes.

Remove the canned squid from the jar and wash if necessary. Then cut the shellfish into small pieces.

Cut the pickled cucumbers into cubes and place on a sieve to drain all excess moisture.

Peel red or any sweet onion and chop it as finely as possible. When using regular onions, you should first either pour boiling water over them or marinate them with a small amount of vinegar. If you do not remove the bitterness from the onion, its taste will overwhelm the taste of the other ingredients.

Combine all prepared ingredients in one deep bowl. Add half a can of canned peas to them, after draining the liquid from the can.

Season Olivier with mayonnaise, add a little salt and mix everything well. In principle, the salad is already ready, you just need to cool it a little in the refrigerator and you can already arrange it in beautiful salad bowls.

To lay out the salad in the shape of a snowman, we need a large flat plate. First of all, we need to form the base of the snowman - the head, chest and abdomen. Accordingly, we lay out three piles of 2.5, 3.5 and 4.5 heaped tablespoons. If you have more salad, then the rest must be evenly distributed among the snowman's balls. The balls are compacted and leveled. You can also make arms and legs from lettuce.

Place finely grated egg white on top of the snowman. If you made more arms with legs, or you ended up with more salad, then when slicing the eggs you should leave all the whites for decoration.

Now let's draw the snowman's face. Peas of allspice or black pepper will appear as eyes, and we will make rosy cheeks from ground paprika. At the tip of the carrot we cut off a small piece from the wide side, cut out a mouth - a smile - from it, and put the tip of the carrot itself in place of the nose.

We make a hat and buttons for a snowman from canned peas.

Now the snowman needs to be dressed up. We will make a scarf from what we have on hand - a thin strip of pickled cucumber, red fish or herbs, like mine.
